White Bean and Pasta Salad

This pasta salad is made with Banza pasta, white beans and lots of veggies for a high protein, high fiber meal. Eat alone or add protein of choice and dinner is served.


Ingredients:

16 ounces Banza, cooked (weight is dry pasta)

2 15-ounce cans white cannelini beans

140 grams shredded carrots

100 grams fresh spinach

2 cups cherry tomatoes, halved

85 grams sun dried tomatoes, chopped (Not packed in oil)

Dressing:

1 cup balsamic vinegar

4 tsp honey

2 Tbsp dijon mustard

6 cloves garlic

Salt and pepper to taste.


Cook pasta according to package.

Rinse and drain beans.

Combine beans, veggies and cooled pasta in a large bowl.

To make dressing combine balsamic vinegar, dijon mustard, garlic and honey. Add salt and pepper to taste.

To pasta salad with veggies and mix.

Makes 10 servings (each serving is about 215 grams)
