Sesame Ginger Vegetable Salad
Filled with tons of antioxidant and fiber rich veggies and topped with a tasty homemade sesame ginger dressing, this is the perfect side for any meal.
Ingredients:
300 grams broccoli, steamed and chopped
326 grams chopped and shredded cabbage
200 rams shredded carrots
200 grams edamame (out of shells)
70 grams green onions, chopped
1 cup chopped fresh cilantro
Dressing:
3/4 cup lite soy sauce
1.5 Tbsp sesame oil
3 Tbsp rice vinegar
2 Tbsp maple syrup
1 lime, juiced
1 tsp ground ginger
4 Tbsp crushed garlic
Combine all veggies. Make dressing and pour on top.
