Healthy Fish Tacos

These fish tacos are bursting with flavor, so healthy and easy to make. You can even substitute shrimp or tofu instead of fish. Top with pico degallo and serve with a vegetable and dinner is served.

Ingredients:

Seasoning:

1 tsp cumin

1 tsp salt

1/2 tsp cayenne pepper

pepper

1 tsp olive oil

1 small bell pepper , chopped (I used orange but choose which you prefer)

1 small onion, chopped

4 cloves garlic, minced

1 jalapeno pepper, chopped

1/2 cup fresh cilantro, chopped

1/2 cup tomatoes, chopped

2 lbs flounder (or any white fish of your choice)

Mix seasonings and sprinkle generously over fish.

Heat 1 tsp olive oil in a large pan. Add garlic, onion and peppers and sautéed until soft.

Add fish and cook until translucent.

Add jalapeño, cilantro, and tomatoes and simmer for a few more minutes.

Serve tacos in 8” flour tortilla.
