Juicy, Baked Pork Tenderloin

This quick and easy pork is lean and a winner for the whole family. Serve with a starch and vegetables for a balanced meal.

Ingredients:

2 lbs pork tenderloin

1/2 lemon juiced

2 tsp crushed garlic

2 tsp honey

1/4 tsp dried basil

1/4 tsp dried oregano

1/4 tsp dried thyme

1/2 tsp salt

dash of pepper

2 Tbsp olive oil

2 tsp Dijon mustard

Directions:

Pat pork tenderloin dry with a paper towel.

Stir together lemon juice, garlic, dried herbs, oil, salt, pepper, Dijon mustard, and honey as a marinade for the pork

Pour half of the mixture into a large Ziploc bag along with the tenderloin. Press out excess air, seal the bag, and chill for 30 minutes.

Place the pork and the marinade in a. 9 x 13 baking dish.

Bake the pork at 375 for at least 20 minutes or until fully cooked.

Transfer to a cutting board to rest for 5 minutes before slicing and serving.
