Honey Balsamic Basil Chicken

This chicken dish is So quick and easy and my kids loved it.

The balsamic and honey give it a slight sweet and sour taste and the fresh basil adds so much flavor.

Add a vegetable and a grain and you have a quick and healthy meal in minutes.

Ingredients:

2 pounds boneless, skinless chicken breasts

2 tsp olive oil

6 Tbsp Balsamic Vinegar

6 Tbsp honey

1/2 cup chopped, fresh basil

salt and pepper

vegetable broth

Directions:

Season chicken with salt and pepper.

Heat olive oil in a nonstick skillet over medium-high heat.

Place chicken breasts in pan and cook for a few minutes.

Stir the honey, and balsamic vinegar into chicken and cover with a lid to keep moisture in.

Add fresh basil and cook until chicken is no longer pink.

Makes 8 servings.
